Order now! > > http://www.hslda.org/elink.asp?id=8998 Baked Potato Skins Potatoes 4 large baking potatoes Olive oil Salt to taste Toppings 1 cup quartered cherry tomatoes 1/2 cup grated Cheddar or Monterey Jack cheese 3 green onions, chopped 4 slices bacon, cooked crisp and crumbled 1/4 cup chopped black olives 1 (4-ounce) can chopped green chilies, drained 1 (15-ounce) can chili with beans Sour cream for garnish Preheat oven to 425 degrees. Bake potatoes 45 minutes to 1 hour until tender. When potatoes are cool enough to handle, halve or quarter and scoop out all but a thin layer of pulp. Save pulp for mashed potatoes or potato pancakes. Place potato skins, skin side down, on baking sheet. Lightly brush inside of skins with olive oil and sprinkle with salt. Bake 10 minutes until potato shells are crisp. Add preferred toppings and return to oven for 10 minutes. Top with sour cream and enjoy. Serves 4. Jodie's No Bake Chocolate Haystacks 2 cups sugar 1/4 cup cocoa powder 1/2 cup milk 1/2 cup butter 1 teaspoon vanilla 1/2 cup creamy peanut butter 3 cups old-fashioned oats Combine sugar, cocoa, milk and butter in saucepan. Bring to simmer and lightly boil until mixture is smooth. Remove from heat. Stir in vanilla, peanut butter and oats. Drop by spoonfuls onto waxed paper or foil. Cool completely. Makes 4 dozen cookies.
