HSLDA: Try Three Cool Recipes for Hot Summer Days!

No need to spend hours in a hot kitchen! Whip up a quick, tasty,
one-dish entree from "Family Favorites from the Homeschool Kitchen"
without touching your stove--simply use our free sample recipe below.
(And feel free to substitute fresh ingredients to suit your family's

1 small red onion, chopped
1 (15-ounce) can cannellini or other small white beans, drained and
1 (7-ounce) can tuna, drained (solid white albacore)
1/2 cup fresh sage or basil, chopped
1 sweet red pepper, seeded and sliced into 1-inch pieces
1 (8-ounce) package frozen French-style green beans, thawed
Salt and pepper to taste
1/4 cup grated Parmesan cheese

4 teaspoons olive oil
2 tablespoons red wine vinegar
1 tablespoon lemon juice
1 garlic clove, finely chopped

Combine onion, beans, tuna, sage, red pepper, green beans, salt,
pepper and Parmesan cheese in a large salad bowl. In small bowl, whisk
together oil, vinegar, lemon juice and garlic. Pour on half of
dressing and toss to coat. Add more dressing as needed. Refrigerate
until ready to serve. Serves 6.
