Cookbook editor Elizabeth Smith suggests combining this Sunday Night Casserole with the delicious Waldorf Salad and No Fuss Peach Cobbler for a complete menu. - - - - - - - - - - - - - - Aunt Lois's Sunday Night Casserole Tester Mandy Liscinski put the dish together one evening and cooked it the next day. She says it will be a staple in her freezer during busy times of the year. 1 small onion, chopped 1/2 bell pepper, diced 1 stalk celery, diced 2 tablespoons vegetable oil or butter 1 pound ground beef, browned and drained 1 (4-ounce) can sliced mushrooms, drained 1(15-ounce) can cream-style corn 1 (14 1/2-ounce) can stewed tomatoes 1 (10 1/2-ounce) can tomato soup 1 teaspoon Worcestershire sauce 1 (10-ounce) package egg noodles or thin spaghetti, cooked and drained 1 cup grated Cheddar cheese Preheat oven to 350 degrees. In a large skillet, saute onion, bell pepper and celery in oil until softened. Add meat, mushrooms, corn, tomatoes, tomato soup and Worcestershire sauce. Simmer 15 minutes. Stir in noodles. Pour mixture into a lightly greased 13 x 9 x 2 baking dish. Sprinkle with cheese. Bake 45 to 60 minutes or until liquid is absorbed.
